During August Ma would take her retreat. And even though it was her time for rest, She would always be doing pujas and prayers for everyone and the world. Ma never stops in this way. And She does not need a physical body for this to continue. She is always present and doing puja. One time, Swami Bhagavati Das asked Ma what she loves to do the most. Ma said to do puja (prayers for all). Any time you are in need or want prayers for someone else, you can ask Ma.
On one summer retreat on Sanibel Island, Ma and Yashoda (Ma’s closest devotee) would take long walks in the morning, always with a restaurant or bakery as the destination to have breakfast. And myself or Swami Durga Das would pick Ma and Shody up and always Ma would bring back something delicious for everyone to share. These scones remind me of those treats that Ma would share. They have become a favorite on Kashi. I hope you enjoy them.

Always and forever at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients:
- Dry Ingredients – (Mix all together)
- 1.5 cups Oat Flour – Gluten Free – Organic
- 3.5 Tablespoons Arrowroot Powder – Organic
- 3/4 teaspoons Xanthan Powder – (Bob’s Red Mill)
- 6 Tablespoons Sugar – Organic
- 1 Tablespoon Baking Powder – Non GMO
- 1/2 teaspoon Sea Salt
- 1/8 teaspoon Cinnamon – Organic
- 3/4 Stick Unsalted Butter – Organic (cold butter cut into pieces)
- Wet Ingredients
- 1 Large Egg – Organic
- 1/2 cup Non-Fat Yogurt – Organic
- 3 Tablespoons Unsalted Butter – Organic (Melted)
- 1 1/2 Tablespoons Vanilla Extract – Organic
- 2 cups Granny Smith Apples – Organic – (Peeled & cut into bite size pieces)
- For top of Scones:
- 1 Tablespoon Half-n-Half – Organic – (Or Non Dairy Creamer)
- 4 Tablespoons Sugar – Organic – (Mix with cinnamon to sprinkle on top of scones)
- 1/2 teaspoon Cinnamon – Organic
Utensils:
- 8×8 or 9×9 Square Pyrex Baking Dish
- Unbleached parchment baking paper
- Food Processor
- 2 Mixing bowls
- Whisk
- Rubber spatula
Directions:
Step 1: Mix Dry Ingredients:
Mix flour, arrowroot, xanthan, baking powder, sugar, salt and cinnamon in mixing bowl with whisk.
Step 2: Cut Up Butter & Blend with Dry Ingredients in Food Processor:
Cut the 3/4 stick of cold butter into small cubes by cutting the butter length wise into 1/4’s and then cutting the other direction into small cubes.
Put some of the flour mix into the food processor, add some cubes of butter and pulse until you have small pea size pieces of butter
Place into an new mixing bowl and continue until done.
Step 3: Mix Wet Ingredients, Peel and Cut Apples into Pieces
In the empty bowl add the egg, vanilla, yogurt and 1/2 stick melted butter and whisk well.
Peel and dice apples into medium bite size pieces.
Add 2 cups of apples to liquid and mix.
Step 4: Add Wet Ingredients to Dry and Put into Pan.
Make a space in the center of the dry mixture, add the wet ingredients into this space.
Mix until there are no dry parts left.
Let sit for 5 minutes.
Grease or use pan spray in pyrex baking dish.
Add scone dough into dish and spread out evenly.
Press your fingers into dough to make dimples across all the surface.
Step 5: Lightly Coat the Top with Half & Half and Sprinkle with Sugar.
Lightly coat the top of the scones with half-n-half or non-dairy creamer.
Sprinkle sugar over the top.
Step 3:Bake the Scones at 400 Degrees until the Top is Brown.
Bake in a preheated 400 degree oven for about 30 minutes, until brown.
