To celebrate the birth of one’s Guru is the most auspicious of times.
To honor the Guru taking form who serves all of humanity.
My Guru, Ma Jaya taught that in any moment you can start fresh.
With a conscious breath we can become present in the moment and feel our beloved. Your beloved is your God, Goddess, Guru, Kindness, Love, the deeper essence within.
They are all the same and they are always present and always with us. Many times when i am cooking, i look at Ma’s picture take a deep breath and that’s it. I am in Her moment.
I believe cooking and food is God. And definitely ice cream is God!
I made vanilla ice cream for Ma’s Birthday.
This recipe is vegan and uses coconut milk and raw soaked cashews as a base.

Always at the Feet of my Guru, Ma Jaya Sati Bhagavati
Ingredients:
- 1 cup Cashews – Raw – Organic (soaked in water for at least 4 hours)
- 2 cans Coconut Milk (full fat) – Organic
- 2 Tablespoons Vanilla Extract – Organic
- 1 Vanilla Bean Whole – Organic (optional)
- 3/4 cup Sugar – Organic
- 1/4 teaspoon Himalayan Salt (pinch)
Utensils:
- Blender
- Ice Cream Machine
Directions:
Step 1: Cover raw cashews with water and soak for at least 4 hours.
Step 2: Add Coconut Milk, Cashews, Sugar, Vanilla and Salt into Blender.
Rinse the tops of the coconut milk cans, open them and add all the milk to the blender.
Drain water from cashews and add to blender.
Add sugar, vanilla, and salt to blender.
Optional – Split vanilla bean down the middle with paring knife. With the back side of knife scrape all the insides of the vanilla bean and add to the ingredients in blender.
Step 3: Blend all the ingredients on high until creamy.
Step 4: Pour Contents into Ice Cream Machine.
Follow the instructions for your ice cream machine. When it s finished put ice cream into a container and place ice cream into freezer. If it can last that long 🙂
